Ishii Yasuo has an unusual background as a former professional boxer. He has been involved in the food and beverage industry since his teens, and after encountering specialty coffee, Manabu as a Manabu and roaster, establishing his own roasting style, "Light Roast High Development," which brings out the potential of the ingredients. In 2019, he placed first in the Tokyo area and third in the nation at the Japan Roaster Competition (JRC).

Panama Geisha , the coffee served by barista Ishitani on the Shinkansen, will be available for a special occasion!


In December 2024, an unprecedented attempt will take place on board the Tokaido Shinkansen, which will run between Tokyo and Kyoto. This is the "Specialty Coffee Shinkansen" event, where Japan's leading baristas will serve specialty coffee on board the train.


Takayuki Ishitani, a three-time Japan Barista Champion, was the first person to install an espresso machine on a Shinkansen train and provide milk beverages (lattes) to passengers.

This time, a special roasting event has started in which Panama Geisha from Abu Farm, selected by Ishitani for this event, will be roasted by Ishii Yasuo of Leaves Coffee Roasters, the same roaster who roasted the Specialty Coffee Shinkansen!

Mr. Ishitani had the following to say about these beans:

This Abu is elegant yet powerful, and you can really feel the harmony with the milk.
Of course, it's delicious when extracted using a filter or espresso, so I could feel the high quality.

This natural anaerobic coffee is something that Leaves Coffee rarely carries, but for the event, at the request of Ishitani, we had Yasuo roast it specially for us.

This precious coffee will be available at the roasting event.

Abu Geisha brings out the gorgeousness and sweetness


Abu Geisha is also used in the finals of the World Barista Championship. Their motto is "to produce coffee with the best balance in the best land for growing coffee." Their coffee has captivated baristas and coffee fans around the world with their unique sweet and gorgeous flavor.


This lot is made by sorting ripe cherries with mountain spring water, pre-drying them in the sun on raised beds for 24 hours, then anaerobic fermentation in sealed Grain Pro bags at low temperatures in spring water for 144 hours.

Once fermentation is complete, the cherries are manually transferred onto raised beds for the final step of drying in the sun for 25 days.

This time-consuming, unique process brings out the gorgeous flavors of jasmine, sweetness of cherry and blueberry, and tropical flavors of passion fruit.

With its unique sweet and vibrant flavor, Abou Geisha has captivated Panamanian coffee fans around the world.


The name of this lot is "Abu Coffee Geisha Natural Double Phase Submerged Anaerobic GN-1590."

Coffee cherries are hand-picked at the perfect time of ripeness, then hand-sorted and floater-sorted using mountain spring water.
The whole cherries are then pre-dried in the sun on raised beds for 24 hours.

This is followed by 144 hours of anaerobic fermentation in sealed Grain Pro bags, which are submerged in spring water.
Once fermentation is complete, the cherries are manually transferred onto raised beds for the final step of drying in the sun for 25 days.

Fragrance and Aroma: Berries, hibiscus, and chocolate.

Taste and aftertaste: Hints of Jasmine, cherry, blueberry, tropical fruits, passion fruit, candy orange, purple grapes, ripe pineapple juice, intense, medium bright acidity, medium body, juicy mouthfeel, and long aftertaste.


Creating the best-balanced coffee in the best land for growing coffee


ABU COFFEE was named by Jose Tedman (the father of the current owner), the grandson of the founder of the farm, Frank Tedman, who dreamed of making the perfect coffee, when he took over his grandfather's ideal and opened a new farm. (Abu comes from Abuelo, the Spanish word for grandfather.)
We developed 10 hectares of land in Boquete and Caña Verde, which is the most suitable area for growing Geisha coffee, and began producing Geisha coffee.

The farm is located on the slopes at the foot of the Baru Volcano, at approximately 1,550m above sea level, and is characterized by fertile, well-drained, volcanic soil that is rich in organic matter.
The coffee-growing areas are protected by the shade of lush forests that are home to a diverse range of flora and fauna, and also enjoy sufficient sunlight hours necessary for coffee growth and production. In the mornings and evenings, the areas are enveloped in a soft mist called Bahareke.

The natural shade and bahareke (mist) that this land provides ensures that the cherries ripen in an ideal balance, resulting in high sugar content and maximum flavor.

After the orchard opened, cherries harvested from fully grown Geisha trees won the Best of Panama award in 2017 with a high score of 91.51 points.
Since then, the top quality of Panama Geisha , which has continued to rank highly every year, along with the lovable character of the current farm owner, Jose, and the unique sweetness and gorgeous flavor, have captivated Panamanian coffee fans around the world as "Abu Geisha ."
