Roast Design Coffee is a specialty coffee shop in Shin-Yurigaoka with the concept of "enjoying coffee". The shop was established by Mikami Hitomi , who placed second in the Japan Aeropress Championship, and Hitomi Ryo, who serves as the coach for Japan at the World Roasting Championships (WCRC). They always have about 10 types of coffee beans available so that you can enjoy the different flavors of each origin. They also offer an original attempt at infusion coffee, where raw beans are soaked in distilled liquor before being roasted, proposing a new way to enjoy coffee.

Santuario Farm has been famous since the dawn of specialty coffee.

This farm was one of the first in Colombia to adapt to the trend of high-quality specialty coffee, and has been cultivating Typica / Bourbon varieties at altitudes of over 2000m since then, making a very ambitious effort. Due to the harsh environment at high altitude, there are years when the harvest is not good, but the attitude of producer Camilo, who always pursues high quality, is truly worthy of being called a seeker.
 
His project has now expanded to Brazil and Costa Rica, where he continues to share Colombian washed coffee techniques to the fullest.
 
This Goldwash coffee is made from the Yellow Bourbon variety, which is highly valued in Brazil, and is produced using a special anaerobic fermentation process.
 
The yellow variety has a sweet taste like watermelon when biting into its fruit, and is less harsh than the red variety, with a sweeter texture. This is a very interesting initiative, as it is rare to see it introduced in Colombia, and perhaps it is the first time it has been attempted.
 
By adding coffee cherry must juice to this Yellow Bourbon and fermenting it anaerobically at a low pH, we have developed a vibrant flavor reminiscent of lime and nutmeg.
 
At Roast Design Coffee, we tried to design the roast to take advantage of the refreshing lime peel-like aroma of this coffee while still allowing you to feel the pleasant acidity in moderation. Surprisingly, it has a strong sweetness and body, so we adjusted the taste balance so as not to hinder the refreshing taste.
 
The resulting RDC Santuario Goldwash is a smooth coffee with a moist texture, yet with the refreshing notes of lime and nutmeg.
 
We hope you will experience this new concept of coffee, which will surely write a new page in the history of coffee.

Rich citrus aroma created by a unique process

 
 
The Popayan Plateau in the central mountain range of Colombia is an area with large temperature differences and abundant rainfall, making it ideal for growing high-quality coffee. Camilo Melisarlo has created a sustainable farm here through environmental initiatives such as soil conservation and biodiversity protection.
 
 
The farm in the rich forest is carefully managed in small plots, and the coffee is grown using only organic fertilizers and no pesticides.
What gives this coffee its color is a selection method called gold-washed. The harvested cherries are soaked in water for an hour, then pulped in a sealed tank for 96 hours. The cherries are then soaked in juice squeezed from the coffee cherry flesh for 72 hours before being dried on an African bed. This creates a coffee with a unique, rich citrus flavor.
