Sakata runs his roastery, KOTO COFFEE ROASTERS , in an old house in Gojo City, Nara Prefecture, a town rich in nature, far from the hustle and bustle of the city. Just two and a half years after opening, he won the 2019 Japan Coffee Roasting Championship (JCRC). He is currently aiming to become the world champion, selling coffee beans online and roasting at the request of local stores, while continuing to hone his roasting techniques in preparation for the next world championship. Sakata says that roasting is "like cooking." He says that it is necessary to both simply make the most of the beans' ingredients, and to bring out the best in the ingredients.

This time, as part of a CROWD ROASTER project, we will be trying out beans that we have never roasted before.
 
This is the first time I've handled these Yellow Bourbon beans, but they come from a famous farm and I've heard they were also used at the WBC.
 
My impression after actually cupping it was that the "gold wash" selection method in particular brings out a unique flavor. Even at the raw bean stage, I could sense a unique aroma reminiscent of juniper berries, which are the source of the aroma of gin.
 
My favorite roast level is "medium," but even though I say medium, I consider it to be a "light roast" and some people might classify it as "light." There is no definition for roast level, so I call it a "medium-light roast."
 
When I roast it for real, I want to combine the spicy and herbal aroma with sweetness. It has a sour taste, but it's not a sharp sour taste that stands out, so I think it would be interesting to add some sweetness to it.
 
The recommended way to drink tea is to try cupping if you can. It's the same as having someone try sashimi of fish and then thinking about how to cook it.
 
Alternatively, you can try using a French press, which is similar to cupping, to check the quality of the unfiltered beans and then decide on the flavor yourself, which I think will give you a feel for the flavor the roaster is aiming for.

Rich citrus aroma created by a unique process

 
 
The Popayan Plateau in the central mountain range of Colombia is an area with large temperature differences and abundant rainfall, making it ideal for growing high-quality coffee. Camilo Melisarlo has created a sustainable farm here through environmental initiatives such as soil conservation and biodiversity protection.
 
 
The farm in the rich forest is carefully managed in small plots, and the coffee is grown using only organic fertilizers and no pesticides.
What gives this coffee its color is a selection method called gold-washed. The harvested cherries are soaked in water for an hour, then pulped in a sealed tank for 96 hours. The cherries are then soaked in juice squeezed from the coffee cherry flesh for 72 hours before being dried on an African bed. This creates a coffee with a unique, rich citrus flavor.
