Fujiyama Hiroyasu is a roaster at FUJIYAMA COFFEE ROASTERS in Yanai City, Yamaguchi Prefecture, facing the Seto Inland Sea. My love for coffee grew and I started working at a wholesale roaster, and after encountering specialty coffee, I started roasting. For Hiroyasu , roasting is like cooking, and he says it's important to use fresh, high-quality raw beans and roast them at the right temperature. ``A difference of 1 degree Celsius changes the taste of coffee,'' says Hiroyasu . Cupping, roasting, and adjustment are repeated day and night to produce the most delicious coffee possible.

Coffee from the famous Espana Farm in El Salvador, established in 1860, has arrived in Japan for the first time.
 
It is so unique that it completely changes the image of coffee from El Salvador, and the anaerobic naturals give it flavors of berries and black cherries, and a lingering aftertaste with apricot-like acidity and sweetness.
 
Anaerobic fermentation, which has become popular in recent years, can result in coffee with a strong fermented smell and half of the good qualities of anaerobic fermentation.
 
Of course, this is not the case with this coffee at all; thanks to the careful selection process, you can clearly taste the berry flavor that is unique to this process.
 
Thanks to the careful finishing process on the farm, the berry flavor unique to this process is clearly expressed, making this coffee something that can be enjoyed like wine.
 
Reading about the farm made me want to try roasting some coffee.
 
The roast level we aim for is slightly lighter than medium roast.
We aim to create a coffee that retains the flavors of berries and black cherries while still maintaining a sweet taste.

This new selection method has been thoroughly researched, resulting in a coffee that brings out the berry flavors unique to this process, making it a coffee that can be enjoyed like wine.

Espana Farm introduced to Japan for the first time

 
The Apaneca district of Ahuachapan department, where the España farm is located, is one of the leading coffee producing areas in El Salvador, bordering Guatemala. The region has both soil and climate suitable for growing coffee, but it is also famous for its strong winds. For this reason, not only shade trees but also windbreak forests have been planted to protect the coffee trees from strong winds.
 
 
The Espana farm was founded in 1860 by Rodrigo Herrera (grandfather of the current owner, Nora Remas de Diaz Nuira). The farm covers 35 hectares, of which 28 hectares are planted mainly with Bourbon grapes, and Percas grapes in areas affected by strong winds.
 
The farm's altitude is between 1,200 and 1,475m, with a microclimate suitable for coffee production and semi-hilly terrain with fertile soil. At the farm, we pay close attention to cultivation methods, harvesting, and post-harvest management. We are also firmly committed to preserving the environment.
 
 
 
When you think of coffee from El Salvador, you might think of it as something easy to drink. However, this coffee is quite unique.
 
The anaerobic natural process produces flavors of berries and black cherry, and a lingering finish with apricot-like acidity and sweetness.
 
Anaerobic fermentation, which has become popular in recent years, can have a strong fermented smell and taste like kimchi if you make a mistake. This coffee, of course, does not have that smell at all, and thanks to the careful selection process, you can clearly taste the berry flavor that is unique to this process.
 
Although it is coffee, it can be enjoyed like wine, so we hope you will try it.
