Sakata runs his roastery, KOTO COFFEE ROASTERS , in an old house in Gojo City, Nara Prefecture, a town rich in nature, far from the hustle and bustle of the city. Just two and a half years after opening, he won the 2019 Japan Coffee Roasting Championship (JCRC). He is currently aiming to become the world champion, selling coffee beans online and roasting at the request of local stores, while continuing to hone his roasting techniques in preparation for the next world championship. Sakata says that roasting is "like cooking." He says that it is necessary to both simply make the most of the beans' ingredients, and to bring out the best in the ingredients.

The product name, Bereka, is an Ethiopian word meaning "respect," and this high-quality Yirgacheffe washed coffee lives up to its name. Ethiopian coffee exporter Moprako procures high-quality Yirgacheffe coffee from ECX ( Ethiopia n Commodity Exchange), then repeatedly dehulls, hand-picks and cups the coffee to create a Grade 1 product.

When I roasted a sample, I felt a clear floral flavor, a variety of flavors such as black tea and lemon tea, a refreshing acidity with a citric and lactic taste, a spreading sweetness like honey or yogurt candy, and a beautiful aftertaste. It has an orthodox and typical Yirgacheffe flavor, but thanks to the hand-picking with almost no defective beans, it is truly a "Beleka (respected)" raw bean worthy of its name.

I roast these beans in my beloved Giesen W6A roaster, finding the sweetest cinnamon to medium roast flavor possible.

The first specialty coffee I tried that really moved me was Ethiopian Yirgacheffe coffee. It was over 10 years ago, but I still remember the impression I had at that time vividly. I'm sure there are very few people who like specialty coffee who don't like Ethiopian coffee. This time, I chose this classic coffee. I've roasted Ethiopian coffee hundreds, even thousands of times since I became a roaster, but for me, the taste of my first encounter with specialty coffee has never surpassed, and I'm sure it will never be surpassed. This orthodox and typical Ethiopian washed coffee beans is similar to that taste. Please give it a try!

Yirgacheffe in south-central Ethiopia is part of the Sidamo region, which is at an altitude of 2,000m. The high altitude brings about a sharp difference in temperature between morning and evening, which produces coffee with a gorgeous aroma that is unlike any other. In addition, they introduced the water-washing method early on, which allows you to enjoy a unique sweet aroma and clean taste.

G1 is the highest grade of washed, but this crop is called ``Bereka'', which is more carefully selected than G1 and has a higher quality finish. High-quality bereka allows you to experience the rich and gorgeous aromas of black tea, lemon tea, lemon, and orange, which are unique to bereka.
