Ishii Yasuo has a unique background as a former professional boxer. He has been involved in the food and beverage industry since he was a teenager, and after encountering specialty coffee, he taught himself how to be a barista and roaster, and established ``Light Roast High Development'', a roasting style that brings out the potential of ingredients. At the 2019 JRC (Japan Roaster Competition), we also achieved 1st place in the Tokyo area and 3rd place nationwide.

Santuario Farm, a pioneering farm specializing in the production of specialty coffee with the aim of sustainable coffee production, has attempted a new selection process called "Gold Washed." Since arriving in the domestic market at the end of last year, this rare lot has gradually become popular.

This "Gold Washed" coffee is characterized by a very laborious process in which the coffee cherries are soaked in clean water for an hour, washed, and then subjected to the first anaerobic fermentation, after which the cherry skins are removed and the remaining 25% mucilage is soaked in must (juice made from the coffee skins and pulp and mucilage) for the second anaerobic fermentation, and then dried on an African bed for 23 days. However, this laborious process resulted in a coffee with a unique flavor. It has a rich lime flavor and spice aroma, and is refreshing yet not too strong, giving the impression of a tea-like coffee that you'll want to drink every day.

I roast these beans lightly using an old 1950s Probat roaster, bringing out the sweetness and fruity aroma of the coffee cherries, as well as the clean character of the coffee. I highly recommend this coffee to those who have never tried it before, or who are itching to discover a new coffee.

Rich citrus aroma created by a unique process

 
 
The Popayan Plateau in the central mountain range of Colombia is an area with large temperature differences and abundant rainfall, making it ideal for growing high-quality coffee. Camilo Melisarlo has created a sustainable farm here through environmental initiatives such as soil conservation and biodiversity protection.
 
 
The farm in the rich forest is carefully managed in small plots, and the coffee is grown using only organic fertilizers and no pesticides.
What gives this coffee its color is a selection method called gold-washed. The harvested cherries are soaked in water for an hour, then pulped in a sealed tank for 96 hours. The cherries are then soaked in juice squeezed from the coffee cherry flesh for 72 hours before being dried on an African bed. This creates a coffee with a unique, rich citrus flavor.
