Fujiyama Hiroyasu is a roaster at FUJIYAMA COFFEE ROASTERS in Yanai City, Yamaguchi Prefecture, facing the Seto Inland Sea. My love for coffee grew and I started working at a wholesale roaster, and after encountering specialty coffee, I started roasting. For Hiroyasu , roasting is like cooking, and he says it's important to use fresh, high-quality raw beans and roast them at the right temperature. ``A difference of 1 degree Celsius changes the taste of coffee,'' says Hiroyasu . Cupping, roasting, and adjustment are repeated day and night to produce the most delicious coffee possible.

We aim to create a coffee that takes advantage of the unique flavor of rose tea while still having a long-lasting sweetness.
This was a hot topic at the 2018 Columbia COE.
This is a double anaerobic fermentation from El Paraiso Farm, just like the popular lot that was sold for more than double the price of the first place lot, despite being ranked 10th.
We have roasted beans from El Paraiso Farm's Double Anaerobic Fermentation before.
The flavor I felt at that time was a perfumed taste that wafted through my nose even while the coffee was roasting!!
El Paraiso Farm's double anaerobic fermentation is characterized by its very unique flavor.
The beans we are roasting this time are named "Rose Tea" and as the name suggests, they have the characteristic of "rose tea".
Flavors include rose hip and peach juice.
When liquefied, it has the scent of hibiscus herbal tea.
When you put it in your mouth, you can feel the rose hips and strawberry compote.
The texture is creamy and the milk chocolate sweetness lingers for a long time.
This coffee is simply sweet and juicy, with a long, bright aftertaste that is wonderful.
These beans, named Rose Tea from El Paraiso Farm, have such potential that you'll want to roast them over and over again.
This time, we are aiming for a light roast.
While still taking advantage of its distinctive flavor, the coffee also has a sweeter taste.
