Kihara MusashiMusashi Kihara

Influenced by the coffee culture he encountered while studying abroad in the United States, Kihara Musashi opened a specialty coffee shop in his hometown of Yoga, Setagaya, in 2012. He started out as a barista there, but soon ran into a problem with creating flavors, and began roasting in pursuit of the best coffee possible. He currently has stores with different concepts in Daikanyama, Shibuya, and Ogikubo, promoting the diverse appeal of specialty coffee. In addition to serving coffee that clearly reflects the characteristics and individuality of its producing region, he is committed to organic coffee and sustainable efforts, with the motto of making the world a better place, even if just a little.

"We deliver a wonderful coffee with a unique fruity flavor reminiscent of kiwi and lime!"

We deliver a wonderful coffee with a unique fruity taste reminiscent of kiwi and lime!

Rich citrus aroma created by a unique process

The Popayan Plateau in Colombia's central mountainous region is a region with large temperature differences and good rainfall, making it suitable for growing high-quality coffee. Camilo Melisallo has created a sustainable farm through environmental initiatives such as soil conservation and biodiversity protection.
The farm in the rich forest is carefully managed in small plots, and the coffee is grown using only organic fertilizers and no pesticides.
The color of this coffee is given by a carefully selected method called gold washed. The harvested cherries are soaked in water for one hour and then pulped in a sealed tank for 96 hours. The fruit is then soaked in coffee cherry pulp juice for 72 hours before drying on an African bed. This creates a coffee with a unique, rich citrus flavor.

What gives this coffee its color is a selection method called gold-washed. The harvested cherries are soaked in water for an hour, then pulped in a sealed tank for 96 hours. The cherries are then soaked in juice squeezed from the coffee cherry flesh for 72 hours before being dried on an African bed. This creates a coffee with a unique, rich citrus flavor.
