Tanaka Yoshiya , the roasting manager at a roasting company in Sendai, roasts 20 to 30 batches of coffee every day, from light to dark roasts, blends, single origins, and even robusta. His motivation came when he discovered "drinkable coffee" at a time when he liked the atmosphere of cafes but didn't like coffee. He became an independent roaster and was a finalist in the JAPAN ROASTER COMPETITION. He is also competing in the barista championship with his wife, who is also a barista.

The J Hill mill in El Salvador is considered one of the most prestigious wet mills in El Salvador.
I actually visited once in 2013.
Although there appear to be various processes in place now, I get the impression that they are producing very traditional and carefully made free-washed coffee, and it is no exaggeration to say that my own standard for the quality of washed coffee is set by Hota Hill.
SL28 variety in El Salvador attracted attention when it was used by Dale Harris of Great Britain, who won the 2017 World Baseball Classic in Seoul.
It seems that this variety has been cultivated in El Salvador under the common name "Kenya" for some time now, and although it does not have the flavor of the Kenyan variety, it has a good body and is a strong coffee for a Central American product.

The Santa Ana region in the northwest of the Republic of El Salvador, near the border with Guatemala, is the region that produces the best quality coffee in El Salvador. There are many coffee plantations on the slopes of the Santa Ana Volcano, the symbol of this region, that take advantage of the volcanic soil, and the influence of the humidity and winds from the Pacific Ocean gives them a wonderful microclimate. The top-class coffee from this Santa Ana region is said to have a quality and flavor that exceeds that of neighboring Guatemala.
This time we will introduce a unique coffee that is made by carefully selecting single origin coffees by the agricultural cooperatives in the area and then selecting them at the prestigious Hotahil Selection Center. The coffees are grown at the best farms in the area, but we have selected the ones that are by far the best in terms of quality through cupping.
In addition to the juicy, sharp acidity that is characteristic of SL28 , the flavors of ginger, apricot, and anise stand out, and the two are well balanced and in harmony. Although it is not a brand from a single farm, the quality is so amazing that you would think it was a cooperative product!
The altitude and soil were carefully selected among the surrounding farms, and the cleanliness of the cup makes it stand out among the high-quality El Salvadoran coffees.
Depending on the degree of roast, this coffee can have a variety of flavors, from gentle sweetness to citrus fruitiness, so don't underestimate it just because it's produced by an agricultural cooperative; you can enjoy the complex flavor that is only possible because it's produced by an agricultural cooperative.
