Located in Kiyosumi Shirakawa, where many famous third wave coffee shops are located, there is a shop called B2 (Bsquared) that seems to have been transported to the cutting edge coffee shop atmosphere of Oceania. Its unique feature is that it combines a bakery and roastery. This cafe, where you can enjoy freshly baked bread and freshly ground coffee, is run by barista Shigeya Okamoto, who used to work at Code Black Coffee Roasters in Melbourne. The roaster is Babaguchi Kenta . Kenta was originally an engineer, and after working at Maruyama Coffee, he was in charge of maintenance and introduction to stores at an import agency for rolling roasters.

The Malagosippe variety, whose grain size is one of its characteristics, is a mutant of the Typica variety, which is native to Brazil. Because the tree itself is expensive, it is difficult to harvest and productivity is low, and its share of the global coffee market is around 2.5%. Mexico, Colombia, and Nicaragua are mainly famous for producing Maragogype, but importer Micafeto, who was looking for delicious Maragogype , came across Antonieta Farm in El Salvador in 2018.

In 2017, Catalina Jasperson, the current owner of the farm, began rebuilding the farm, which had fallen into disrepair due to El Salvador's civil war and revolution in the 1970s and the opening of farmland. Maragogype , which has become a rare species, is being grown to become a specialty of Antonieta Farm.

This Maragogype has a delicate taste despite its large size. As for the flavor, you can enjoy the sweetness and aroma of peanuts, the yellow citrus acidity of grapefruit and lemon, and the sweetness of cherry and ripe apple.

If you want to focus on the acidity and enjoy it, we recommend waiting until around 3 weeks after roasting to enjoy the luster.

In order to take advantage of the goodness of this bean, the ratio should be slightly increased compared to the usual brewing method, instead of 1:15 to 1:16 (15g powder: 225cc ⇒ 15g powder: 240cc), and for espresso it is 1: If you increase 2 to 1.2.2 (20g: 40g yield ⇒ 20g: 44g yield), you can enjoy the delicate and clean acid.

In order to bring out the maximum potential of this bean, we will roast it at a light to medium roast. The roasting machine we use is the Loring A15, one of only a few in Japan. I am a former engineer who was responsible for the maintenance and installation of this LORING SMART ROASTER. I believe that being aware of the characteristics of this roasting machine is what sets me apart as a roaster. This roaster has no paddle and uses only hot air to float the beans. This makes it possible to aim for a clean cup without any unpleasant tastes. Although it is not an easy roaster to use, it is able to heat the entire roaster gently and evenly from the inside. Please come and try the rare varieties that are roasted using LORING's unique method, which is different from direct flame or semi-hot air roasters.

Antonieta Farm, located on the San Miguel volcano in eastern El Salvador, is owned by the Jasperson family, descendants of German immigrants. Although the altitude is not very high in the country, it is the perfect environment for growing Maragogype , and combined with the high aspirations of the producers, it has become one of the few farms producing this high-quality variety.
 
 
Maragogype is a mutation of Typica that originated in Bahia state in northern Brazil. It is known for its very large beans and unique flavor. Because it was difficult to harvest due to its tall tree height and was vulnerable to rust disease, it was replanted with a resistant high-yielding cultivar and is now a rare variety. Please enjoy Maragogype which has a juicy flavor, sweetness like brown sugar, and a rich body and rich taste.
