It's been a while. This is ISHIHARA .
The other day I went to a coffee farm in Laos. The farm is managed by a Japanese person, who also processes the coffee.

By actually harvesting and refining the coffee, I realized once again how difficult it is to make coffee.


This time, we also tried our hand at the fermentation process in Laos.
The fermentation process is fascinating, but it must be carried out while taking into consideration various environmental conditions, including the risk of spoilage.


Nowadays, if you go to a coffee shop, it's common to see anaerobic coffee on offer, but I think we should give more thought to the efforts that go into the coffee farming.

With that in mind, we roast this Costa Rican Anaerobic!

Ortiga Farm is located in Tarrazu, an area known for producing high-quality coffee in Costa Rica.

Producer Don Fernando and his family are well aware of the unique conditions of the region, including climate, altitude and soil, necessary to produce high-quality coffee, and are committed to protecting the local environment. However, the family works together to produce specialty coffee.

The combination of high altitude and fertile soil at Ortiga Farm produces coffee berries with concentrated flavor.
In addition, the selection of coffee cherries is done with great care to produce high quality coffee.

The coffee produced this time is Caturra from this farm, which has been processed through anaerobic fermentation.


It has a strong cinnamon flavor from the process, but also a watermelon-like flavor along with the Citric acidity.
As it cools down, I get the impression that the fermentation sensation comes out little by little.

The coffee always has a smooth texture and is not rough even when it cools down, making it delicious to drink from when it's hot until it cools down.
