COFFEE VALLEY opened in 2014 as the first specialty coffee shop in the Ikebukuro area. Its owner is Koike Tsukasa . He was attracted to the coffee culture he encountered while Manabu in the UK, and while gaining experience as a barista, he began roasting in search of the ideal taste. The hand drip specialty shop on the third floor of the shop offers a space where customers can enjoy carefully selected high-grade beans and a story from the origin to roasting and brewing. He wants to create a place where any customer can find their favorite coffee from a wide variety of coffee beans and roasting degrees.

Roasting is a crucial step in the process from cultivation to a single cup of coffee. The degree of roasting determines the flavor profile, which can be seen as an expression of the shop's philosophy.

My goal is to roast coffee beans that have a clean, sweet aftertaste that lingers for a long time. My specialty is medium roast, but I'm always striving to be able to roast any level, from light to dark.


We use the PROBATONE12 roaster from the German company Probat. I chose it because I've always thought of it as the go-to roaster. It has a wide roasting range and good balance, and it's a model that easily brings out the sweetness of the beans.

While it's true that roasting significantly impacts the taste, my underlying desire is simply for customers to say, "That was a delicious cup of coffee." I want to continue deepening my roasting skills in pursuit of even better coffee.

Yirgacheffe G1 processed at the Alicja Washing Station. This special batch is made up of coffee from approximately 650 Alicja farmers.

Most of the coffee growers near Alicja Washing Station are small-scale farmers who own less than one hectare of land. They grow coffee as a cash crop, and also cultivate potatoes, mangoes, avocados, and other subsistence crops to support their basic livelihoods.
Due to their limited income, they cannot afford to purchase Manabu fertilizers, pesticides, or herbicides, so they cultivate their crops without using them.

At the Alicja Washing Station, the cherries are first sorted by floater, then sun-dried on African beds. To ensure they reach the G1 grade, the final process is carried out by a large number of people, who are meticulously sorted by hand.

It has flavors of lime and blood orange, a sweetness similar to yellow peach, and a medium body that makes it a satisfying drink.
