This Idido is a vibrant and elegant coffee. It's clean, with a juicy fruitiness reminiscent of passion fruit and green apple, combined with floral aromas. Its complex flavor, reminiscent of wine, and smooth mouthfeel make it a truly appealing cup.

Comment from Mr. Kosakada
We hope you enjoy not only the natural characteristics of Ethiopia, but also its full-bodied taste and sweet, long-lasting finish.
At Raw Sugar Roast , our focus in creating our coffee is on ensuring that the inherent flavors of the coffee beans are not lost or diminished during the roasting process.

Even if a coffee receives a high score at a competition, it cannot become a truly great cup without proper roasting.
While terms like "light roast" and "dark roast" are used to describe the degree of roasting, these are generally distinguished by the color of the coffee beans.
While terms like "light roast" and "dark roast" are used to describe the degree of roasting, these are generally distinguished by the color of the coffee beans.
Even within that range of roasting levels, there is a proper roasting that cannot be judged solely by color. As coffee roasters, our goal at Raw Sugar Roast is to create flavors that do not produce negative tastes such as "sour" or "tasteless."
We hope that the wonderful coffee we inherited from the producers will reach many people through CROWD ROASTER and Raw Sugar Roast .

Idido is a coffee-producing region located in the Yirgacheffe district of the Gedeo Zone in the Southern Nations, Nationalities, and Peoples' Region. Spread across high altitudes ranging from 1,900m to 2,450m, the cherries, collected from surrounding small-scale producers, are carefully processed at local washing stations.
When harvest season arrives, fully ripened cherries are hand-picked and transported to the washing station. Unripe and damaged cherries are carefully removed, and only the best quality cherries are used for the natural process.

The selected cherries are spread thinly on raised African beds and frequently stirred and sorted to prevent uneven drying. The drying process takes several weeks, allowing the cherries to reach the ideal moisture content.
Many of the producers are small-scale farmers with plots of land less than one hectare. While cherishing traditional farming methods, they continue to cultivate their coffee by interplanting shade trees and ensete (false banana), which is their staple food, alongside their coffee, making the most of nature's bounty.
Yirgacheffe is considered one of the birthplaces of coffee and is world-renowned as a leading producer of washed coffee. It mainly comprises the Gedeo Zone, but also includes some coffee-producing areas in the neighboring Oromia State to the west, with altitudes ranging from approximately 1700m to 2440m.

The people living in this area are primarily the Gedeo people, but also include the Oromo and Amhara tribes. The washing station is said to have been introduced here in the 1970s, and the region has long been known as a producer of high-quality coffee representative of Ethiopia. The mountainous terrain with abundant water resources also contributes to the quality of the coffee from this area.
