TAKAMURA COFFEE ROASTERS was started by a wine specialty store with the aim of providing "delicious coffee that enhances the afterglow of a meal." Iwasaki , the head roaster, is a talented coffee maker who came second in the JCRC 2018, a competition that tests roasting techniques, and won the JACRC 2019, a competition to determine the best roasters for competitive beans, the following year. Just as wine négociants search for delicious grapes, he has made it his mission to find great coffee producers and work with them to promote delicious coffee. He searches for undiscovered producers in Japan and imports a large number of nano lots.

``What is the process name: Gold Washed?'' This was the first question I had about Santuario Farm in Colombia. After coffee cherries are harvested, they go through a refining process until they become the raw material known as green coffee beans. Natural purification, washed purification, honey purification, anaerobic, aerobic, acrobatic (lol)... Motoi! I hate technical terms!

To make it easier for you to understand, I will introduce the recipe for this “Gold Washed”♪
① Soak the picked coffee cherries in water for 1 hour and wash them ② Ferment the cherries anaerobically in a sealed tank for 96 hours ③ Remove the pulp (25% of the slimy mucilage between the pulp and seeds remains)
④The fruit skin and pulp called must, and the slime are soaked in filtered juice and fermented anaerobically for 72 hours. ⑤Washed and dried.

The Popayan Plateau in the central mountain range of Colombia is an area with large temperature differences and abundant rainfall, making it ideal for growing high-quality coffee. Camilo Melisarlo has created a sustainable farm here through environmental initiatives such as soil conservation and biodiversity protection.
 
 
The farm in the rich forest is carefully managed in small plots, and the coffee is grown using only organic fertilizers and no pesticides.
What gives this coffee its color is a selection method called gold-washed. The harvested cherries are soaked in water for an hour, then pulped in a sealed tank for 96 hours. The cherries are then soaked in juice squeezed from the coffee cherry flesh for 72 hours before being dried on an African bed. This creates a coffee with a unique, rich citrus flavor.
