In his 20s, while worrying about his future dreams, he encountered specialty coffee and entered the world of coffee. He became fully involved in roasting under Paul Bazett, a world barista champion from Australia, and opened ``GLITCH COFFEE & ROASTERS'' in Jimbocho in 2015. We continue to focus on single origin and light roast, and the fruity coffee that can only be tasted here attracts many coffee lovers and continues to propose new coffee tastes. There are three stores in Jimbocho, Akasaka, and Nagoya.

The coffee beans from the Santuario Farm project are all unique, and there is a certain flavor that can only be produced through this project.

At Glitch, we carry three types of Santuario coffee from Brazil, Colombia, and Costa Rica, and among them, the Colombian coffee beans are the most unique. They have a strong aftertaste and a citric, lime-like flavor. Since it's a pretty rare coffee, we decided to roast it at CROWD ROASTER .

I think that the typical citrus flavors like orange and lemon are relatively easy to bring out with top-of-the-line coffee beans, and the coffee is easy to taste.

But this Yellow Bourbon tastes like lime, shiso leaves, and Japanese pepper. It's a coffee with a unique spicy flavor and a citric flavor.

The well-balanced, subtle acidity is a flavor that can only be achieved using this selection method, so we hope to bring out the complex blend of such characteristics.

In fact, it's a popular coffee bean, with many roasters at CROWD ROASTER roasting it as well.

However, the flavor that Glitch aims to produce is that kind of complexity. Since coffee beans have different flavors depending on the roaster, I hope that people can enjoy the same beans together with coffee from different roasters.

Rich citrus aroma created by a unique process

 
 
The Popayan Plateau in the central mountain range of Colombia is an area with large temperature differences and abundant rainfall, making it ideal for growing high-quality coffee. Camilo Melisarlo has created a sustainable farm here through environmental initiatives such as soil conservation and biodiversity protection.
 
 
The farm in the rich forest is carefully managed in small plots, and the coffee is grown using only organic fertilizers and no pesticides.
What gives this coffee its color is a selection method called gold-washed. The harvested cherries are soaked in water for an hour, then pulped in a sealed tank for 96 hours. The cherries are then soaked in juice squeezed from the coffee cherry flesh for 72 hours before being dried on an African bed. This creates a coffee with a unique, rich citrus flavor.
