Located in Kiyosumi Shirakawa, where many famous third wave coffee shops are located, there is a shop called B2 (Bsquared) that seems to have been transported to the cutting edge coffee shop atmosphere of Oceania. Its unique feature is that it combines a bakery and roastery. This cafe, where you can enjoy freshly baked bread and freshly ground coffee, is run by barista Shigeya Okamoto, who used to work at Code Black Coffee Roasters in Melbourne. The roaster is Babaguchi Kenta . Kenta was originally an engineer, and after working at Maruyama Coffee, he was in charge of maintenance and introduction to stores at an import agency for rolling roasters.

This coffee has a very unique refining process. During the washed process, the coffee cherry pulp is soaked in squeezed juice, and then the drying process begins. The result is a unique flavor, with refreshing flavors reminiscent of lime juice, gin and tonic, and ramune.
 
 
When I grilled some samples, I found that when roasted shallowly, the lime, peppermint, and mint flavors were brought out beautifully and had a refreshing impression.
However, as a cup, I got the impression that the flavor was on a separate layer, and I got the impression that there was some space between the flavor and the liquid.
 
Also, as I roasted it to medium roast, the refreshing flavor began to change to a lactic acid flavor, resulting in a soft, sweet, and cohesive cup, so this time I roasted it at medium roast!
 
The freshness and beauty of a light roast will be lost a little, but instead we brought out the consistency of the cup and the soft yet moderately heavy sweetness!
 
As for the flavor, the refreshing impression of lime and mint changes, and you can enjoy the yellow impression of Calpis soda, ramune sweets, pineapple, and energy drinks!
It has just the right amount of weight, so it goes perfectly with milk!
You can make it into espresso and pair it with lukewarm milk, or at this time of year you can enjoy it as an iced latte or me.

Rich citrus aroma created by a unique process

 
 
The Popayan Plateau in the central mountain range of Colombia is an area with large temperature differences and abundant rainfall, making it ideal for growing high-quality coffee. Camilo Melisarlo has created a sustainable farm here through environmental initiatives such as soil conservation and biodiversity protection.
 
 
The farm in the rich forest is carefully managed in small plots, and the coffee is grown using only organic fertilizers and no pesticides.
What gives this coffee its color is a selection method called gold-washed. The harvested cherries are soaked in water for an hour, then pulped in a sealed tank for 96 hours. The cherries are then soaked in juice squeezed from the coffee cherry flesh for 72 hours before being dried on an African bed. This creates a coffee with a unique, rich citrus flavor.
