LiLo Coffee operates three unique stores based in Osaka. `` LiLo Coffee Roasters '' is a casual coffee stand, ``LiLo Coffee Cafe'' offers coffee in a pure cafe atmosphere, and ` LiLo Coffee Factory '' handles roasting for all stores. With the mission of ``How to make life more enjoyable through coffee,'' he is accumulating data while roasting dozens of batches every day, and continues to take various approaches.

When you think of dark roasts, you think of a solid body, richness, and bitterness. This colorful dark roast is a departure from that image, combining a sweet, full-bodied taste with a refined acidity and flavor that hits the nose. In this roast, we have optimized the flavor by manipulating this fine acidity. This Panama Cotowa has a strong tropical flavor that is inherent to the beans, and the rolling hot air roasting brings out this flavor even more.

This time I'm going to roast these beans with a full city roast. These beans are characterized by an explosive tropical fruit flavor and a thick sweetness. By roasting them deeply, the sweetness of the fruit, like a compote, suddenly appears in the rich, high-quality flavor. I'm convinced that the balance of this sweetness and the soft, vivid acidity can only be expressed by roasting them deeply.

For high quality coffee beans, light roasting is a must. If you want a rich flavor, hot air roasting is recommended. If you want a fuller body, direct flame roasting is recommended. If you want a good balance, semi-hot air roasting is recommended.

Overturning these stereotypes about roasting, and based on my experience with the roaster, I will pursue a new method of "dark roasting with hot air roasting" that seeks both flavor and body at the same time. The colorful dark roast I seek. I would be happy if you could experience the vivid red-purple of "Panama Cotowa" together with me as the start of this journey.

An exotic and mysterious coffee born in Panama's famous gardens

 
 
Ricardo Coiner's Cottowa Farm is highly regarded around the world as a leader in specialty coffee cultivation in Panama.
 
Here is an exotic and very impressive coffee born here. He inherited 166 Ethiopian wild varieties cultivated at CATIE (Tropical Agricultural Research Center) in Panama, and began cultivating them to select varieties that would suit his farm. There were only a few plants of each variety, and this coffee was a blend of all the Ethiopian wild varieties harvested in the first year.
 
 
It was a very complex coffee with an exotic, perfume-like impression. It is characterized by blueberry and blackberry acidity and a long aftertaste of sweetness. Please enjoy the unique taste.
