Onishi Masahiro opened SWITCH COFFEE TOKYO at the age of 27 after training at coffee shops in Australia and Fukuoka. The shop carries carefully selected coffee beans from all over the world, and handles the whole process from roasting to extraction. In 2018, he was selected as one of the world's coffee roasters by Gear Patrol magazine, and in 2019, he placed 3rd at the Japan Coffee Roasting Championship. With the mission of ``making delicious coffee a commonplace in Tokyo,'' they have now opened stores in Yoyogi Hachiman and Nihonbashi, delivering carefully selected coffee every day.

The impression in the cup is a very gorgeous aroma, with a light and crisp acidity. It also has the aroma of exotic herbs and spices. It has a fruity feel of pineapple and grapefruit, and a somewhat East Asian feel with cloves, anise, cardamom, and dried tangerine peel .

Rich citrus aroma created by a unique process

 
 
The Popayan Plateau in the central mountain range of Colombia is an area with large temperature differences and abundant rainfall, making it ideal for growing high-quality coffee. Camilo Melisarlo has created a sustainable farm here through environmental initiatives such as soil conservation and biodiversity protection.
 
 
The farm in the rich forest is carefully managed in small plots, and the coffee is grown using only organic fertilizers and no pesticides.
What gives this coffee its color is a selection method called gold-washed. The harvested cherries are soaked in water for an hour, then pulped in a sealed tank for 96 hours. The cherries are then soaked in juice squeezed from the coffee cherry flesh for 72 hours before being dried on an African bed. This creates a coffee with a unique, rich citrus flavor.
