Good relationship between pot and coffee (1) Yukiwa pot

I'm sure you've all wondered which pot to use when brewing hand drip coffee.
Ever since I started making hand drip coffee, I've tried many different pots, but I've never been able to find one that works best for me.
In this project, I would like to use this experience to think about the good relationship between pots and coffee.
The first one is the one I use most, the Sanpo Sangyo Yukiwa Pot.

The store where I worked as a barista at the time used the Yukiwa Pot, but after trying out a wide variety of pots, including narrow-mouth pots, single-serve pots, and electric pots, I decided on the Yukiwa Pot. I have calmed down. (I still use different pots depending on the brand and the flavor I want to bring out.)

Sanpo Sangyo Yukiwa Pot

Sanpo Sangyo is a company located in Tsubame-Sanjo, Niigata Prefecture, which is famous for its metal processing, and is a brand trusted worldwide for its beautiful designs and high-quality products.
There are many variations of coffee pots from Sanpo Sangyo, but among them, I love the ``COFFEE POT/M-TYPE M Coffee Pot''.

Yukiwa pot allows you to freely express your taste.

The biggest appeal of Yukiwa Pot is its ability to express a wide range of flavors.
What makes this possible is the "thickness of the spout."
Coffee pots generally have a narrow spout. However, the Yukiwa pot has a much larger spout than a typical pot. The thin spout has the advantage of being able to pour hot water with a stable thickness, but since hot water can only be poured with a thin thickness, the range of pouring speed is narrow and the flavor can be expressed accordingly. The width will also become narrower. On the other hand, the Yukiwa pot has a thick spout, so you can control the pouring speed at will, allowing you to express a wide range of flavors.

Since coffee is an agricultural product, it is almost impossible for the same brand to have exactly the same bean surface and density. Therefore, if you're particular about it, you'll need to approach it differently with each cup (especially if it's a different brand). It is no exaggeration to say that the Yukiwa pot is able to respond to this change in approach because of its wide mouth.
If you want a brand that has a gorgeous aroma, pour it over with thick hot water to get a clear taste while still retaining the gorgeous aroma. If you want a brand that has a sweet taste or thick texture, carefully extract it with hot water to get the full flavor. In this way, Yukiwa Pot allows you to express the flavor that is tailored to each brand.

Grip fit

In addition to the thickness of the spout, one of the reasons I like it is because of the comfort of the grip.
The grip of the Yukiwa pot is rounded and has a sturdy shape. Its roundness and weight make it fit perfectly in your hand when you hold it.
The secure fit allows you to hold the pot even when you are relaxed, allowing for a natural drip without any unnecessary force. By doing so, you can achieve smooth pot control and extract a clear taste without any unpleasant tastes.
It will take some practice to be able to drip in a relaxed state, but once you have mastered it, I think you will be able to extract in a natural way like never before.

It may take some time to get used to it, but by learning how to use the Yukiwa Pot, you will be able to create flavors that you were unable to extract before.
The range of flavors that can be created with the Yukiwa Pot is so wide and there are so many possibilities.
However, the Yukiwa pot I use is a ready-made one that has been custom-tuned.
You can remove the perforated plate inside the pot (you can buy one without the perforated plate at Kappabashi), shave the spout so that you can pour thicker water, adjust the fit of the grip, etc. .
I hope to be able to tell you more about such maniac stories in more detail.

Although I may try changing the drip recipe, I don't think I often try changing the pot. Each pot has its own characteristics, and there are ways to use it that are suitable for it.
If you feel like you're getting into a rut with hand drip, it might be interesting to try different pots for each brand. Please try out various pots to see what kind of difference the taste can make depending on the pot.
We will continue to introduce various pots, so please look forward to it!
