This is an announcement regarding the addition of a new roaster to our team.
We are pleased to announce that Hikaru Ono ( Brewman Tokyo ), a coffee roaster, has joined CROWD ROASTER as a new member of our team!

Brewman Tokyo is a bar opened in Yoyogi, Tokyo, by Hikaru Ono , the 2022 JBrC (Japan Brewers Cup) champion.

Here, Mr. Ono not only brews the coffee but also roasts it himself, pursuing the ideal coffee that is clean, free of off-flavors, and has a clearly defined flavor.

Ono , who encountered an espresso machine at a restaurant in his hometown of Iwate, decided to pursue a career as a barista, and in his twenties, he went to Melbourne to train.
I met partners there, and together we opened a coffee shop in Hong Kong.
In Hong Kong, he became the Aeropress champion and competed in the world championships.
After that, he continued to compete in Japanese tournaments with Tetsuya Kasuya as his coach, and finally achieved victory at JBrC 2022.

 

Ono says that the more he understood extraction, the more he came to believe that roasting is a crucial step in determining the flavor.
We don't focus on the degree of roasting; instead, we aim for the point where the coffee beans taste best.

The eye-catching bright orange roaster is a DIEDRICH, which features infrared roasting.
Its rotation speed can be adjusted through customization, and its simple structure makes it easy to use.

Ono 's roasting process, which is designed to be easily balanced during extraction and to bring out the coffee's unique characteristics, is based on working backward from the extraction process, resulting in a flavor that is distinctly his own.

Ono 's ideal coffee is one that is intuitively delicious, without any minor negative aspects. His quest for the perfect brew and roast continues.

 

To commemorate the participation of roaster Hikaru Ono ( Brewman Tokyo ), we will be releasing a limited-quantity tasting set (50g x 3 varieties) called "ONO Brew Champion BOX"!

This is the first ever tasting set from CROWD ROASTER , packed with Mr. Ono 's meticulous attention to detail.

 

This time, after carefully considering the compatibility between Mr. Ono and the brands, we have selected three unique brands.

The three selected teas are: "[CSRT] Colombia/El Paraiso Farm/Castillo/Double Anaerobic Rose Tea", "[ETH] Panama/Cotowa Farm/Ethiopia/Natural", and "[ SL28 ] El Salvador/Jata Gil Selection Center/ SL28 /Washed".
We have prepared a tasting set featuring wines of different varieties, selection processes, and origins.

The other day, our management team also did a cupping of the roasted beans that Mr. Ono sent us. We were able to fully appreciate the unique characteristics of each variety, while also sensing the numerous flavors brought out by Mr. Ono 's roasting technique. We were able to taste the kind of coffee that Mr. Ono aims for, without any negatives.
