El Paraiso Farm's double anaerobic fermentation became known around the world for its astonishing result, ranking 10th in the Colombian COE in 2018 and being sold for more than double the price of the top-place lot.

The Cauca department, where the El Paraiso farm is located, is located in the Andes mountain range in south-central Colombia and is extremely famous as a region that consistently produces specialty coffee of high quality standards. Of the many flavors available at El Paraiso Farm, the most representative and popular is the "Lychee" flavored lot.
 
The process for this batch of lychees involved anaerobic fermentation for 48 hours at 18°C while still in the cherry state, followed by another anaerobic fermentation for 96 hours at 19°C after the pulp was removed. This laborious method involves two separate anaerobic fermentations, one for the cherry and one for the parchment. This is known as double anaerobic fermentation. During the washing process, the lychees are first washed in hot water at 40°C, then in water at 12°C. They are then dried for 34 hours at a temperature of 35°C and a humidity of 25°C, adjusting the moisture content to 11%. This complex process results in a unique flavor that cannot be found anywhere else.
 
The moment the coffee beans are ground, they release a refreshing aroma that makes you think of shaving real lychee. When lightly roasted, the flavor is characterized by a fresh citrus acidity. As the name suggests, this coffee has flavors reminiscent of lychee and peach, making it recommended for those who want to enjoy a refreshing taste.

The medium roast retains these flavors while also reducing the acidity compared to light roasts. It also has a slightly milky taste, with hints of strawberry chocolate for a well-balanced finish.
