In this article, we will provide detailed information about this 4th edition of Esmeralda Geisha 's "Cabana" lot.
The Esmeralda farm is divided into small sections.
Within Esmeralda Farms, there are three farms growing Geisha varieties. They are named Jaramillo, Cañas Verdes, and El Velo, and Jaramillo is the farm where the Peterson family, the owners of the farm, first discovered Geisha by chance. On this farm, which is always covered in fog, Geisha was planted at an altitude of 1,600 to 1,700 meters, and the first representative lot of Esmeralda Geisha was produced.
On the other hand, this time's ``Caña'' is a section of the Caña Verde farm. While Jaramillo is cultivated at a maximum height of 1,700m, Caña Verde is cultivated at an even higher height of around 2,000m, and the different microclimate from Jaramillo produces Geisha with a different personality.
"Cabana" is also at an altitude of over 1,700m.
It wasn't until the 1990s that the Peterson family began growing coffee in earnest, and after Geisha was rediscovered, the Peterson family purchased a small piece of land around the original Caña Verde farm and began producing Geisha . expansion. Since then, the many award-winning Esmeralda Geisha lots have come from this Caña Verde foothills.
A lot where you can really feel the Geisha flavor.
Caña Verde is divided into 12 plots, which are scattered on the slopes rather than one large plantation area (see diagram below).
Each section is said to have a unique flavor due to slight differences in climate, temperature, sunlight, and soil, but Esmeralda Geisha 's unique jasmine flavor can be felt in every section.
By the way, in order to manage the production of such micro-lots on a unit-by-plot basis, it is necessary to drastically rethink the conventional production process, something that not many farms can do.
Esmeralda Farm has experience in lot separation since the beginning of growing Geisha , which makes it possible to carry out such strict management.
The section circled in red is "Cabana". The size is 7.9ha.

For this lot, the coffee was placed in a sealed tank and fermented anaerobically using yeast for 72 hours. After fermentation, it is dried for 32 days.
In this way, the process has also been devised, including a fermentation process in a sealed tank.
This Geisha washed has scents of jasmine, honey, orange, and papaya. It has a very balanced acidity and produces a creamy cup.
