We are pleased to announce that Brewman Tokyo roaster Hikaru Ono has joined CROWD ROASTER !

 

 

We are extremely excited that Mr. Ono , who has a background as a Brewers Champion, is joining CROWD ROASTER team, which is a little different from the roasters we've had before.
In the future, I hope to create content not only about roasting but also about coffee brewing with Ono san, so please look forward to that as well!

To commemorate Mr. Ono 's participation, CROWD ROASTER has started selling a limited quantity of the "ONO Brew Champion BOX," a tasting set of three different brews.

We are extremely grateful for the positive feedback we have received, and we would like to express our sincere gratitude to everyone who has already purchased it.

For this set, we carefully selected three coffee varieties that would pair well with Mr. Ono 's roasting process.

 

 

The three brands are: "[CSRT] Colombia/El Paraiso Farm/Castillo/Double Anaerobic Rose Tea", "[ETH] Panama/Cotowa Farm/Ethiopia/Natural", and "[ SL28 ] El Salvador/Jata Gil Selection Center/ SL28 /Washed".
 
We discussed with Mr. Ono that this roasting method would be a good match for his approach of bringing out the flavor without giving off any negative impressions, and that's how we decided on it.

The operations team also conducted a cupping session of the roasted beans sent by Mr. Ono , and while we were able to fully appreciate the unique characteristics of each variety, we could also sense the numerous flavors brought out by Mr. Ono 's roasting technique, and we were able to taste the kind of coffee that Mr. Ono aims for—a coffee without any negative aspects.

This set is named "ONO Brew Champion BOX" to reflect the idea that the roasting process is based on working backward from Mr. Ono 's extraction method.

As the name suggests, experience top-class coffee that only a Japanese brewer champion can create.

This set is a tasting set featuring wines of different varieties, selection processes, and countries of origin.
Therefore, each brand has a different flavor profile, making this a set you can enjoy without getting bored.

 

Of course, we recommend brewing it using the hand-drip method, but before that, we'd like you to try another way of drinking it: using a French press.

The French press uses the same "immersion" method as cupping to determine the flavor, so it can extract all the various flavors without wasting any.
This is indeed the best way to experience the many different flavors that Ono has created.

However, using a French press can easily bring out bitterness and off-flavors, so it's important to start by brewing with a French press to appreciate the unique flavors of each coffee.

From there, I think it would be interesting to try extracting the coffee using a hand-drip method to avoid bringing out any negative flavors such as off-flavors, aiming for an even higher quality taste.
 
Since it requires less effort than hand-drip brewing, we recommend trying three different types of coffee simultaneously using a French press.
