The often overlooked importance of roasting
Roasting is the process of applying heat energy to raw coffee beans to roast them. At first glance, it may seem like a simple process, but the sheer number of methods and wide range of roasting theories makes it incredibly complex.
Before roasting, green beans are pale green, with no coffee-like taste or aroma, and cannot be consumed as is. Roasting transforms them into the brown coffee beans we are used to seeing. Beans harvested from coffee fields managed by hand are also finally transformed by hand into a drinkable state.
The unique flavor of coffee comes from Manabu transformation that occurs when the components contained in the beans are heated. Even green beans can develop a fragrant aroma, richness, sweetness, and acidity, as well as unique flavors resembling fruits, flowers, and grains. The flavors extracted can vary surprisingly greatly depending on the heating time and how the heat is applied.
What I have said so far may seem obvious to those who already know, but if you think about it, green coffee beans have no flavor, color, or aroma. This means that coffee has no distinctive characteristics at all.
The flavors, textures, and body that we enjoy every day, discuss critically with fellow coffee lovers, and carefully consider for each cup we order at the Shin shop, only emerge after roasting.
When you reconsider this, it's no wonder that roasting is said to be the most important step in the coffee-making process.
More precise roasting control

Since the so-called third wave, which has become a major trend in coffee culture, roasting has become an area that attracts even more attention.
As more and more professionals in various processes at SEED and CUP have begun to receive attention, it has become clearer that roasters, as mentioned above, play a major role in creating the flavor of coffee.
For example, research is being conducted into roasting methods from light to dark, including the choice of roast level, focus on the flavor to be extracted, and how to bring out the texture and body, and it is becoming possible to control these things.
In the specialty coffee world, light roasts are preferred to bring out the coffee's inherent flavor more clearly, but this has become possible thanks to established techniques that allow the flavor and aroma to be fully brought out even with a light roast.
One factor behind this is the improvement in the functionality of roasting machines, but a major factor is that professionals known as roasters have acquired their skills through trial and error.
A new expression of roasting
Nowadays, there are many varieties of coffee beans, and with the diversification of selection methods, it is no exaggeration to say that there are countless coffee brands. As an agricultural product, coffee has different characteristics depending on the year, so coffee beans with the exact same quality and flavor cannot be produced every year.
Our roasters face these once-in-a-lifetime coffee beans and Shin swords, interpreting them in their own way and imbuing the beans with their feelings through roasting.
Of course, the quality of the green beans themselves is important for the perfection of roasting, but a cup of coffee is produced through a combination of many factors, including the roaster's sensibility, technique, and environment. Since the taste of coffee changes even with slight differences in factors, it is inevitable that the taste created by each roaster will differ.
Roasters combine their outstanding skills with their own sensibilities and Manabu to express themselves through the act of roasting. This is a new expression in the name of roasting, and can be said to be an "art".
