Recently, El Paraiso Farm, which was a hot topic two years ago, has produced a new crop of lychee lot [CSLC] that leaves a truly astonishing impression. El Paraiso Farm cultivates the Castillo variety, which had not received much attention until now, at a relatively high altitude (around 1700m), and by incorporating trendy techniques such as anaerobic and double anaerobic processing, they are expressing a variety of flavors.

Regarding last year's lychee lot, most roasters opted for a light roast. The sweetness and aroma, reminiscent of lychee, captivated coffee lovers from the very first sip. However, in a sample roast of this year's new crop, roasted slightly darker using my test roaster, I was able to extract an astonishingly sweet flavor and a mouthfeel that showed great potential.

The texture and flavor are so exquisite, it's no exaggeration to call it a dessert. I can't wait to see what kind of expression this new crop of lychee from El Paraiso Farm will take on by the top-class roasters gathered at CROWD ROASTER this year.
