Now, let me tell you how this unique coffee is made.

Some of you may recognize this coffee as the creation of Camilo Merisalde, who leads the "Santuario Project," an innovative initiative that spans national borders.

 

The Santuario farm, which produced this coffee, is located in the Popayán Plateau in the central mountainous region of Cauca Department, Colombia.
In this region, which boasts significant temperature fluctuations and abundant rainfall, making it ideal for cultivating high-quality coffee, farm owner Camilo Merisalde has created a sustainable farm through environmental initiatives such as soil conservation and biodiversity protection.

This farm, which began in 1999, was designed from scratch by Camilo with the aim of reviving the good old Colombian mild coffee.

In Colombia, where there has been a shift towards rust-resistant varieties such as Castillo and Catimor, we mainly cultivate Bourbon and Typica , which have been traditionally grown.

The coffee is cultivated on 188 hectares at an altitude of 1,890 to 2,000 meters. The farm, nestled in a lush forest, is meticulously managed in small plots, and the coffee is grown using only organic fertilizers and no pesticides.

Here, various trials and errors were conducted regarding production methods, varieties, and drying methods. Project farms were established not only at the Santuario farm but also in Cali, Valle del Cauca, to test rare varieties and production methods. This know-how forms the foundation of the "Santuario Project" that Camilo is conducting with partners in Colombia, Brazil, Costa Rica, and Mexico, and through continuous updates, coffees with unique flavors are being produced in various locations.

 

What gives this coffee its unique character is the "gold washed" processing method. The picked coffee cherries are soaked in water for an hour to wash them, then the cherries alone are sealed in a tank and fermented anaerobically for 96 hours. The pulp is then removed (leaving 25% of the mucilage), and then the cherries are steeped in a juice made from the skin and pulp called the must, and fermented anaerobically for 72 hours. Finally, they are washed and dried.

This process resulted in a coffee with a unique and rich citrus flavor.
