Raw Sugar Roast Yuya Kosakada roaster joins CROWD ROASTER !

CROWD ROASTER welcomes a new member: roaster Yuya Kosakada from Raw Sugar Roast , a shop located in Kyodo, Tokyo!
 
To commemorate this, a tasting set called "KOSAKADA Sugary BOX" has also gone on sale.
This set allows you to enjoy a light roast coffee with overwhelming sweetness and complexity, roasted by Yuya Kosakada .
 
Mr. Kosakada has worked as a barista for many years, striving to bring specialty coffee to as many people as possible.
As the next step, we are using roasting to share its appeal with even more people.
 

A rising roaster who has made a spectacular entrance into Tokyo's coffee scene.

Yuya Kosakada worked at Manabu , the shop of world barista champion Paul Bassett, and has been active as a barista since its opening at GLITCH COFFEE & ROASTERS, a renowned light roast coffee shop in Jimbocho, Tokyo.
I was invited by Suzuki Kiyokazu the owner and roaster of GLITCH, when he left Paul Bassett to start his own business, and I worked as a barista there for five and a half years.
 
Kosakada , who originally had a background in music, has always favored genres like punk that break down conventional ideas.
When he first learned about the profession of barista, he thought that brewing coffee for just one person in a world where mass production is the norm was "super punk."
 
 
That encounter led Kosakada to become deeply involved in the world of coffee. Throughout his approximately 10 years as a barista, he has considered how to convey the appeal of coffee to more people and further develop coffee culture.

One solution is to roast the beans ourselves and deliver coffee with a controlled flavor to more people.
" Raw Sugar Roast " was opened in 2022 in Setagaya Ward, Tokyo, together with Masashi Oda, who had gained experience at roasters both in Japan and abroad.

Kosakada 's roasting process doesn't focus on simple, easily understandable flavors or just creating coffee that's good to drink; instead, it produces "coffee to engage with," where the inherent flavors derived from the coffee variety and terroir are intricately interwoven.

Mr. Kosakada says that his goal is to create a coffee that can convince drinkers with just one sip, as an entry point to conveying the appeal of coffee to as many people as possible. He hopes that this entry point will spark an interest in the unique characteristics of coffee from different regions and the producers themselves, leading to a deeper understanding of coffee.
 
The roasting machine operated by Mr. Kosakada is a Giesen, which has high heat retention and can be used to develop flavors and express a rich mouthfeel. He carefully creates a detailed profile down to the second, making sure not to miss any points that bring out the best characteristics of the coffee.
 
Kosakada says that they carefully structure their operations with the goal of minimizing human error.
Furthermore, we consistently perform cupping checks and maintain our stance of roasting as an "amplification circuit" for flavor development, stemming from the passion of the origin and producers.
