At the La Hueria farm in Boquete, Panama, farm owner Pedro Moss himself built the processing plant and lays the coffee cherries on African beds, working on the process day and night.
Furthermore, out of consideration for the natural environment, we research and utilize our own unique fermentation technology to avoid using large amounts of water. Our dedication to and the quality of our honey process, in particular, are said to be "the best in the world."

Huella means "fingerprint" in Spanish. The brand name was chosen because indigenous harvesters, who do not use written language, use fingerprints instead of signatures when communicating with them.
 
Each piece is hand-picked by skilled harvesters and carefully finished by hand from start to finish, guaranteeing its quality.
His dedication to quality led to him winning the Golden Folk Award at the Great Taste Awards in the UK, often called the "Oscars of Food," in 2019. In 2020, he achieved another remarkable feat, with five varieties of his roasted beans receiving awards.

"N97" is the new flagship Panamanian coffee that Pedro Moss, a solitary innovator, has perfected through years of research and experimentation.

About 10 years ago, in the high-altitude Boquete region with its diverse geography and weather conditions, after thorough research into rainfall throughout the year, temperature and humidity, and wind direction, they selected the land best suited for coffee processing. There, they personally carried stones to build an enclosure, lined up African beds, and began the coffee process.
 
He personally visits orchards he has personally selected and harvests the cherries from. With almost no help from anyone other than a few neighbors, he handles the process day and night, stirring the cherries and monitoring their condition, earning him the reputation of being "the man who is most particular about the process in the world."

 
Furthermore, in order to maintain the lives of local people, especially children, and the surrounding natural environment, we have strived to minimize the resources and energy required for coffee production. As a result, instead of using the large amounts of water traditionally used in processing, we have focused on a refining method that utilizes fermentation and have conducted our own independent research.

The subsequent pandemic and severe extreme weather events brought anaerobic processes to the attention of farms throughout Panama, but even before that, Pedro Moss had already perfected a method of extracting unprecedented cherry aromas and terroir to the fullest extent through his own rigorous control of fermentation.

Despite his global acclaim that transcends Panama, Pedro Moss continues to explore and practice his processes in pursuit of even greater heights. Starting with the 2020/21 harvest lot, he deliberately shifted from "Panama Geisha " to a new brand called "Panama Terroir," and began producing the highest grade coffee, "N97," based on the concept of achieving a "perfect score" in his own evaluation.
