[Shallow roast] Hikaru Ono ( Brewman Tokyo )

 
Ono 's coffee is lightly roasted, so you can fully enjoy the flavor characteristics of the brand.

        Pouring amount: 600ml
        Extraction time: 1 minute 45 seconds
        Steaming: 40 seconds
        Grind: Medium coarse grind
        Water temperature: 92 degrees

There are two points.
 
① Make the extraction time faster than other roast levels <br />Mr. Ono 's coffee this time has a tea-like and light impression.
We consciously extract it to bring out its goodness.

There are various factors involved, so it's difficult to make a general statement, but shorter brewing times will give you a lighter taste, while longer brewing times will give you a more robust coffee.
Since we want Ono 's coffee to have a light flavor, we recommend brewing it faster than other roast levels.
 
② Grind coarsely <br />In order to create the clear drinking experience that is unique to light roasts, we recommend grinding coarser than other roasts.

[Medium roast] Tanaka Yoshiya ( SPARK COFFEE ROASTERS )

 
Yoshiya 's coffee has an excellent balance of sweetness and acidity, and is extremely smooth to drink.

①Take more time to steam than other roasting degrees
Yoshiya 's coffee is a cup that you should enjoy with its good balance of sweetness and acidity.
This is a cup that you want to balance while bringing out the fruity taste of the brand and the chocolate-like richness.
To achieve this, it is ideal to have a good balance of all flavors.
By allowing more time for steaming, the flavor will be extracted slowly, making it easier to get the full flavor.
 
② Pour with thick water <br />The longer the steaming time, the more likely the flavor will be strong and the coffee will tend to be a little heavy.
Therefore, by pouring thick hot water, we can adjust the concentration and aim for a well-balanced coffee.

[Dark roast] Daito Hagiwara ( THE COFFEESHOP )

 
Hagiwara 's coffee has an impressive sweetness reminiscent of chocolate and a thick texture that can only be expected from a high-quality dark roast.

① Grind it a little finer than other brands <br />This coffee from Hagiwara is a cup that you will want to enjoy the sweetness and richness that comes from the degree of roasting.
For this reason, we recommend grinding the coffee a little finer to make it easier to extract the flavor.
 
② Thoroughly use thin water <br />In order to bring out the richness and drinkability that you are aiming for, we recommend that you pour slowly and slowly with thin water.
By pouring slowly, you will be able to make coffee with a strong flavor, making it easier to create the rich drinking experience that you want to serve this time.
