Yanaka "CROWD CAFE" | A relaxing cafe that specializes in coffee [A place where you can drink CROWD ROASTER coffee]

CROWD ROASTER coffee, made from carefully selected beans roasted by leading roasters in the Japanese coffee scene, is used in discerning restaurants and cafes.



This time we will introduce "COUZT CAFE + SHOP", a natural cafe that opened 15 years ago in a quiet residential area in the Yanesen area of Tokyo's downtown. This area is known as a Hikaru spot, but at COUZT CAFE, which is tucked away at the back of an alley, time flows at a leisurely pace. We spoke to the owner, Hitomi Tsubaki, about how she creates this atmosphere.

"Court Cafe is a place where you can relax and enjoy time with yourself or with someone else. We use organic ingredients wherever possible, offer homemade food and sweets, and all the staff enjoy working together to make the cafe."

As a cafe where you can relax with just one drink, they have a wide variety of drinks on the menu, including homemade juices and organic craft beer. The food is basically homemade, including taco rice with brown rice and roasted Iberian pork, as well as homemade sweets such as chiffon cake and scones.

"We focus on coffee, and we even have a blend called the 'Miyata Blend' that our manager, Miyata, created after training under a roaster. We carefully brew each cup of coffee by hand and serve it to our customers. We don't advertise ourselves as a coffee specialty shop, but we hope that as customers use our cafe on a daily basis, they will say that the coffee here is delicious."

Tsubaki first came across CROWD ROASTER when he was looking for light roasted coffee. The light roast beans he had been using had been discontinued, so he was looking for a replacement.

"Many people don't like light roast coffee, but I think if you're going to enjoy coffee, it's better to have a wide range of flavors, so I wanted to offer a delicious light roast."

Tsubaki became interested in CROWD ROASTER because he could clearly see who produced the coffee and could choose the roaster.
The brand he chose was Yellow Bourbon from Colombia.

"Yellow Bourbon is very refreshing and gorgeous. It has a nice aroma and a spicy taste, so I think it's a coffee that can be recommended to a wide range of people. It also doesn't have the unpleasant sourness that makes it hard to drink, so we thought it would be good for people who are new to light roasts, and that's why we chose it."

The pairing with the homemade sweets served at the shop is also very popular, and in particular the refreshing flavor of Yellow Bourbon matches well with the citrus fruits often used in the shop's sweets, broadening the range of ways to enjoy sweets.


In addition, when customers order Yellow Bourbon at the store, they are served their coffee with a card produced by CROWD ROASTER that explains the details of the coffee beans and an introduction card for the roaster who roasted them. This is said to be an opportunity for customers to become more interested in coffee.

"The cards are so beautiful that customers are happy when they receive them, and another great thing is that they can take them home and read them later. I get the impression that customers enjoy drinking delicious coffee, and also learning more about where the coffee comes from and what kind of coffee it is. They also get interested in the roasters. The beans for Yellow Bourbon are the same, but the roasters can change, so it's an interesting idea, and I think it creates a new way to enjoy coffee."

"I think that Japan's cafe and coffee cultures are still in the early stages of development, and what people drink and how they enjoy it will determine their future history. CROWD ROASTER 's presence in this context is very unique, and I hope to continue working together on various projects in the future."
