What is the second Esmeralda special project “Trapiche” lot?

At CROWD ROASTER , we have the ``Esmeralda Special'' brand, which is given only to the highest quality lots of the Esmeralda Farm in Panama that made Geisha famous, roasted by Japan's leading roasters. A plan is in progress.
The second batch is ``Esmeralda Special Geisha Washed × Ishii Yasuo '', and we had Mr. Ishii Yasuo of LEAVES COFFEE ROASTERS roast the ``Trapiche'' lot.
As mentioned in a previous article , CROWD ROASTER team sought out the highest quality Panamanian Geisha and contacted Esmeralda Farm through BRISA & TIERRA, a trading company specializing in specialty coffee Geisha I was able to purchase "Esmeralda Special" in nano lot.
In this article, we will provide detailed information about this second Esmeralda Geisha lot.

The Esmeralda farm is divided into small sections.

Within Esmeralda Farms, there are three farms growing Geisha varieties. They are named Jaramillo, Cañas Verdes, and El Velo, and Jaramillo is the farm where the Peterson family, the owners of the farm, first discovered Geisha by chance. On this farm, which is always covered in fog, Geisha was planted at an altitude of 1,600 to 1,700 meters, and the first representative lot of Esmeralda Geisha was produced.

On the other hand, this time's ``Trapiche'' is a section of the Caña Verde farm. While Jaramillo is cultivated at a maximum height of 1,700m, Caña Verde is cultivated at an even higher height of around 2,000m, and the different microclimate from Jaramillo produces Geisha with a different personality.
It wasn't until the 1990s that the Peterson family began growing coffee in earnest, and after Geisha was rediscovered, the Peterson family purchased a small piece of land around the original Caña Verde farm and began producing Geisha . expansion. Since then, the many award-winning Esmeralda Geisha lots have come from this Caña Verde foothills.

Trapiche with a strong Geisha flavor

Caña Verde is divided into 12 plots, which are scattered on the slopes rather than one large plantation area (see diagram below).

Each section is said to have a unique flavor due to slight differences in climate, temperature, sunlight, and soil, but Esmeralda Geisha 's unique jasmine flavor can be felt in every section.

By the way, in order to manage the production of such micro-lots on a unit-by-plot basis, it is necessary to drastically rethink the conventional production process, something that not many farms can do.
Esmeralda Farm has experience in lot separation since the beginning of growing Geisha , which makes it possible to carry out such strict management.

Now, this special product lot is typical of Esmeralda Farm, which is thoroughly managed, and the data is shown in detail.

"Trapiche 65AS"

Lot name: Trapiche Trapiche harvest farm: Cañas Verdes Cañas Verde area: Cañas Verdes Elevation of Cañas Verde harvest area: 1,600m
Process: Washed Annual precipitation (estimated): 3,500mm
Average temperature: 16-23℃ during the day, 10-15℃ at night
Average tree age: 14 years Lot harvest range: 4.5ha
Harvest date: 2022/2/2
The lot is harvested in Trapiche, a section in the southeast of Caña Verde. After harvesting, it is washed in a mill in Esmeralda, and then fermented for 72 hours in a closed tank (Anaerobic).
After fermentation, it is dried on African beds for 20 days.

Flavor notes:
Trapiche 65AS is a powerful Geisha washed with intense floral notes of jasmine and rose. At the same time, it has a profile of mandarin, lime, peach and cherry.

In this way, the process has also been devised, including a fermentation process in a sealed tank.
Perhaps because of this, the flavor is floral, such as ``intense'' jasmine.
The strong jasmine flavor, a hallmark of Esmeralda Geisha , seems to be even more pronounced in this lot.
