REDPOISON 's Tomomichi Morifuji roasts and brews a special Panama Geisha coffee! [BARNEYS CAFE BY CROWD ROASTER 1st Anniversary Event]

Amidst the approaching typhoon, a lively Geisha festival unfolds in Ginza.

On Sunday, September 20th, to celebrate the first anniversary of BARNEYS CAFE BY CROWD ROASTER , we welcomed Tomomichi Morifuji from REDPOISON as our guest barista.

On the day of the event, a typhoon was approaching, resulting in unfortunately bad weather. Nevertheless, many customers still came to BARNEYS CAFE.

For this event, Mr. Morifuji roasted two types of coffee beans: one from the new generation farm in Panama, Flying Pumas, and another from the prestigious Janson, both Geisha varieties. Both were roasted exclusively for this event, and on the day, Mr. Morifuji himself stood behind the counter at BARNEYS CAFE BY CROWD ROASTER brewing and serving the coffee.


Mr. Morifuji made numerous fine adjustments before the event. He had a look of pure satisfaction on his face when the flavor was just right.


Not only did those who came specifically for Morifuji -san's specially roasted Geisha coffee have the opportunity to savor this precious cup, but so did domestic and international customers who happened to be visiting Barneys New York that day.


Of the two Panama Geisha wines, the one that garnered the most attention was from the new-generation farm, Flying Pumas. It boasts vibrant fruit flavors and a rich, lingering finish. The way the aromas shift one after another in response to temperature changes is like a kaleidoscope. Its overwhelmingly complex flavor is its greatest appeal.


On the other hand, the prestigious Janson farm offers a refined Geisha with a harmonious balance of aroma and sweetness. It boasts a rich flavor reminiscent of osmanthus flowers in autumn, and an impressive cup with elegant, lingering sweet aromas of loquat and rose.

Both coffees boast a wonderful flavor, showcasing Morifuji 's unique roasting techniques.
This cup truly showcased how the roasting process brought out two distinct characteristics of the coffee.


After repeatedly adjusting the taste, Mr. Morifuji ultimately decided to change the type of water he was using.

The product chosen this time is "Izumo High-Concentration Hydrogen Water," which is ultra-soft water from Izumo.
Despite having a pH of 8.5, this water has an unusual balance of hardness of 15, which surprised Morifuji , who said that it "brought the flavors together and opened up."


Those who experienced this flavor were impressed by REDPOISON 's unique interpretations of two different Geisha , and it was striking to see them eagerly asking Mr. Morifuji questions about roasting and brewing.

This is a new generation of Panama Geisha , boasting vibrant fruit flavors and a rich, lingering finish.
The refreshing juiciness of star fruit is complemented by a sweet and sour tang reminiscent of tamarind. The rich flavors of rum and raisins, combined with the depth of dark chocolate, are further enhanced by a sophisticated, complex acidity reminiscent of balsamic vinegar, adding depth to the overall taste.
